Changing out your dead battery is a fairly straightforward proces 2032 Battery you need -
Ignition Switch part number 1K0 905 865A. After some investigation the actual switch can be changed without having to change the steering lock with the sheerhead bolts. To remove. prise the plastic cover off and you will see 2x tabs which can be released with 2x small screwdrivers and pull it out.

Yes as long as it's the correct size so it fits then AGM or EFB is fine - car should be coded with new serial number and battery type. A 2016 should not need a new battery though, and is still under warranty. I'd push harder on your dealer or find another one to diagnose the issue. My 63 plate is still on its original EFB and no errors or warnings.
There's a 13mm bolt & clamp at the bottom left of the battery in the middle - it's reasonably easy to get to with an extension socket. The battery terminal clanps are 10mm.
